1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 red bell pepper, diced
1 zucchini, diced
1 cup cherry tomatoes, halved
1 ½ cups long-grain white rice
3 cups low-sodium chicken broth
1 tsp smoked paprika
½ tsp dried oregano
Salt and black pepper, to taste
¼ cup fresh basil, chopped
Juice of 1 lemon
Instructions
Sear the Chicken: Heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Add chicken pieces seasoned with salt, pepper, and smoked paprika. Cook until golden and cooked through, about 5-6 minutes. Remove chicken and set aside.
Sauté Veggies: In the same pot, add onion and garlic; cook until softened and fragrant, about 2-3 minutes. Add red bell pepper and zucchini; sauté for another 4 minutes.
