  • 3 tbsp all-purpose flour

  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the beef: Pat beef cubes dry with paper towels, then season generously with salt and pepper. Toss the beef with flour until coated evenly.

  2. Brown the beef: Heat vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add beef in batches and brown on all sides, about 4-5 minutes per batch. Remove browned beef and set aside.

  3. Sauté vegetables: In the same pot, add onions and garlic, cooking for about 3 minutes until translucent. Stir in tomato paste and cook for another minute.

  4. Deglaze the pot: Pour in the Guinness beer (if using) and scrape the bottom of the pot to release browned bits. Let it simmer for 2 minutes.

  5. Combine ingredients: Return beef to the pot and add carrots, potatoes, beef broth, thyme, and bay leaves. Stir to combine.

  6. Simmer: Bring the stew to a boil, then reduce heat to low, cover, and let it simmer gently for 2 to 2.5 hours, or until beef is tender and vegetables are cooked through.

  7. Season and serve: Remove bay leaves, taste, and adjust seasoning with salt and pepper. Garnish with fresh parsley before serving.
